I just spent a lovely morning with my nephew making snickerdoodle cookies.
I rolled the dough into balls, he rolled them in the cinnamon/sugar mixture.

SNICKERDOODLES

Bake: 8-10 minutes per sheet
Makes: About 4 dozen

1 1/2 cups sugar
1/2 cup butter or margarine; softened
1/2 cup shortening
2 large eggs
2 3/4 cups all-purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
1/4 cup sugar
2 tsp. ground cinnamon

1. Heat oven to 400 degrees F

2. In large bowl, beat 1 1/2 cups sugar, the butter, shortening and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, cream of tartar, baking soda and salt.
3. Shape dough into 1 1/4 inch balls. In small bowl, mix 1/4 cup sugar and the cinnamon. Roll balls in cinnamon-sugar mixture. On ungreased cookie sheet, place balls 2 inches apart.
4. Bake 8-10 minutes or until set. Immediately remove from cookie sheet to wire rack.
